Roasted Potatoes with Garlic and Rosemary

  • 1 lb. potatoes, chopped into 1-inch pieces

  • 3 large cloves of garlic, minced

  • 1 3-inch piece of rosemary, leaves removed from stem

  • Salt to taste

Preheat oven to 425°F. Place a baking pan with 1 inch of water on the bottom rack.

Place potatoes in a steamer basket. inside a medium pot. Cover and steam them until almost done, about 10-15 minutes. You should be able to stick a fork in the potato, but it won't be very soft.

Place potatoes, garlic, rosemary and salt in a parchment-lined baking pan. Toss to distribute flavorings.

Bake for 30 minutes, stirring midway.

Taste the potatoes and add salt and pepper, if needed.

Serves 2.
